Makes: 6 servings
Serving Size: 1 taco
Preparation Time: 15 minutes
Cooking Time: 10 minutes
Ingredients
2 tsp. olive oil
1/2 large red onion, thinly sliced
1 small jalapeno pepper, seeded and minced
3 large portobello mushrooms, stems removed, caps wiped clean, and thinly sliced
6 (6-inch diameter) corn tortillas
2 tsp. hot or mild chili powder
1 tsp. ground cumin
1/2 tsp. dried oregano
1/4 tsp. sugar
1/8 tsp. cayenne pepper
1/8 tsp. black pepper
2 Tbsp. water
1 cup finely shredded green cabbage
1/4 cup fat-free sour cream
1 Tbsp. finely chopped cilantro
Preparation
1. Preheat the oven to 350 degrees. In a large skillet, heat the oil over medium-high heat. Add the onion and saute for 3 minutes. Add the jalapeno pepper and saute for 30 seconds. Add the mushrooms and saute until they are soft.
