Diabetic Recipe of the Week: Fresh Salmon Burgers

Makes: 4
Serving Size: 1 burger
Preparation Time: 25 minutes
Cooking Time: 6 minutes
Ingredients
1 b. salmon fillet, skinned, with any bones removed
1/4 cup panko bread crumbs
2 Tbsp. finely minced red bell pepper
2 Tbsp. finely minced red onion
1 Tbsp. finely minced cilantro
1 Tbsp. lite soy sauce
1/2 tsp. fresh grated ginger
2 tsp. canola or vegetable oil
4 small whole wheat burger buns, toasted
4 sliced tomato
4 romaine lettuce leaves
Preparation
1. Add one quarter of the salmon to the food processor. Process the salmon until it is like a paste. Add to a bowl. Chop the remaining salmon by hand into small pieces, and add them to the salmon paste.
2. Add the bread crumbs, red pepper, red onion, cilantro, soy sauce, and ginger to the salmon and mix very gently. Handling the salmon mixture gently, form it into 4 patties. Place the patties on a plate, cover, and refrigerate for 20 minutes.
3. Remove the salmon burger patties from the refrigerator and let them stand at room temperature for 5 minutes. Coat a large skillet with cooking spray. Add the oil and heat to medium-high.
4. Add the salmon burger patties and cook them for about 3 minutes per side, or until they are cooked through.
5. Serve the burgers on the buns with the tomato and lettuce.

Diabetic Recipe of the Week: Miso Salmon

Makes: 4 servings
Serving Size: 4 oz.
Preparation Time: 5 minutes
Cooking Time: 10 minutes
Marinating Time: 2 hours
Ingredients
2 Tbsp. brown rise miso or red miso
2 Tbsp. lite soy sauce
2 Tbsp. fresh orange juice
1 Tbsp. brown sugar (or equivalent sugar substitute)
1 tsp. orange zest
pinch crushed red pepper flakes
4 salmon filets (4 oz. each)
Preparation
1. Combine the miso, soy sauce, orange juice, sugar, orange zest, and red pepper flakes in a large bowl. Add the salmon fillets (thawed, if using frozen) and turn them to coat. Cover and refrigerate for 1 hour.
2. Set an oven rack 4 inches from the heat source and preheat the broiler. Cover a broiler pan with foil. Coat the foil with cooking spray.
3. Remove the salmon from the marinade, letting any excess liquid drip into the bowl. Discard the marinade. Add the salmon to the broiler pan, skin side down if using fresh fish.
4. Broil the salmon for 8 to 10 minutes, until it flakes with a fork but is still moist. Let the salmon rest a few minutes before serving.

Diabetic Recipe of the Week: Spiced Roasted Salmon

Makes: 12 servings
Serving Size: 4 oz.
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Ingredients
Rub
1 Tbsp. ground cumin
1 Tbsp. ground coriander
1 Tbsp. brown sugar
1 Tbsp. hot or mild chili powder
1 tsp. kosher salt
1 tsp. ground cinnamon
1 tsp. ground black pepper
1/2 tsp. cayenne pepper

1 salmon (3 lbs., cleaned, in one piece, with skin, no head or tail)

Garnish
Fresh cilantro or parsley sprigs
1 lemon, cut into wedges
Preparation
1. Preheat the oven to 400 degrees. Line a large baking sheet with foil or parchment paper. In a small bowl, combine all the rub ingredients. Place the salmon skin side down on the prepared baking sheet. Spread the rub on the fresh side of the salmon.
2. Roast the salmon for 17 to 20 minutes or until cooked through (the flesh will be opaque and feel firm to the touch.) Turn the oven over to broil. Broil the salmon for an additional 3 to 5 minutes, until it is slightly golden.
3. Place the whole salmon on a decorative, food-safe platter. Top with the cilantro sprigs and lemon wedges.
