Diabetic Recipe of the Week: Gingerbread

Serves: 8
Serving Size: 1/8 of gingerbread
Ingredients
1/2 cup Splenda Sugar Blend for Baking
1/2 cup molasses
1/4 cup unsweetened applesauce
1/2 cup egg substitutes or egg whites, beaten
1 1/2 cups whole wheat flour
1 tsp. ginger, ground
1 tsp. baking soda
1/2 cup boiling water
Preparation
1. Mix together all ingredients except the water; then add water. Mix thoroughly. Bake in a loaf pan at 350 degrees for 30 minutes, or until a toothpick inserted into the center comes out clean.
